Use Videora`s Ipod video converter to convert your videos and you`ll be able to select your ipod video model and then the formats/resolutions it will allow.

When its converted your video, it should appear in your itunes library (under Movies) - assuming you haven`t changed this setting in the software.
You can then simply drag the movie onto your ipod within iTunes (just like you would do for any music). They will then appear in the Video->Movies menus.

I assume you have the TV out lead, and that you have selected the option to prompt you about TV output on the ipod. Providing you`ve done that then it should output the video correctly.

I thought the new ipod software prevented playback to tv unless you but an extra `ipod compatible` device.

That`s why I never click to upgrade itunes.
